My Easy Baked Chicken Ala King Recipe

My son suggested this dish last night before we left from work and we passed by the grocery and meat shop to get some ingredients we needed. 

Here is my easy baked Chicken Ala King recipe that you might want to try out.
It will take you less than an hour to prepare and cook everything including the rice.

Ingredients are ( picture is shown below)

2- whole chicken breast without skin cut into small cubes
2- cups of cream

Use any brand according to your preference.
butter or vegetable oil will do for sauteeing, use both as the butter will add flavor to the cream.

diced carrots and young corn for added crunch and color and also a good source of vitamins and fiber.

Open a can of mushrooms and add a cube of chicken bouillon to add flavor.
canned green peas or fresh.
garlic and onion minced
grated cheese. 
Again use any cheese you have in the fridge. I used Kraft quick melt cheese for this recipe.
A dash of fresh ground black pepper.
And, the second most important ingredient fresh cooked white rice
Sautee garlic, onion and chicken meat until tender.
Add cream when meat is brown. Add salt and pepper, stir. Add vegetables after a minute adds the cream in low heat. Simmer for about 5minutes in low fire, for not to curd the cream. Adjust the thickness of the cream by adding a dissolved tablespoon of flour in water. Add half of the grated cheese and simmer on low heat until the desired thickness.

Trivia: the casserole I used was a hand over casserole from my mother and she got it from her mother too. So basically this casserole is approximately a little over 50 years old now. :) 

Layer the cooked white rice in an oven safe pan or dish. I used my Chef's Classic Paella Pan for this rice dish.

Topped the rice with the creamy chicken with grated cheese covering the whole area.
Slide it in the oven in 200 degrees for about 10-15 minuted or until the cheese is melted.

Served hot, you can sprinkle some chili flakes per plate for add more kick and contrast to the cream.

This flavorful creamy rice dish serves 6-8 and way more cheap than ordering plate in a fast food restaurant.

Featured Product: Tips on How to Season an Oster Iron Cast Pan

From our trip to Manila yesterday we got a set of new Oster cast iron frying pan from Handyman Store in Robinsons.

I grew up knowing this brand, from cooking ware and dining ware. I know a lot of you who loves to cook knows this brand very much.

I got this set on sale which made me decide right there and then. This three set of Oster cast iron frying pan originally costs Php 1295 and I got it for Php 906.50 that was 30% off!
I am so happy and excited for this frying pan set since cooking is what I love to do!

Each pan is full-metal including the holder and they are so heavy! I tried this biggest size from the set this morning when I cooked egg and sausages for breakfast. The egg did stick from the edges of the pan but it got lessen when it turned for the sausages because the grease from the sausages helped coated the pan.

When I was done the cooking I googled more on tips on how to care for iron cast pan.
Since this is a pre-seasoned cast iron pan, to prevent from rusting every after use I need to use hot water and scrub it with salt. Some also recommend the use of liquid soap and scrubbing pad.

How to season a cast iron pan:
  • every after use make sure the pan is dry (towel dry or heat the pan in a stove in high-heat until water residue dry is gone) 
  • use a paper towel damped with corn, canola or any other oil available the entire pan from inside-out. 
  • place pan in an oven upside down and cook the pan in a heat of the oven until the oil evaporates. 
  • store cast iron pan in a non-damp space to store the seasoning process. continue the process of seasoning every after use. 
It makes consume much of my time in seasoning the pan but having a cast iron pan is an investment that can be pass on from generation to generation.

Creamy Adobo Mushroom Pasta with Nestle Cream

This was my entry for the Adobo dish with Nestle Cream over at Nestle Cream Facebook page.
But this entry did not make it to the cut off time, imagine the frustration and disappointment? 
I am not blaming myself it's all my internet provider's fault! By the time I was uploading the entry PLDT acted up. The internet connection totally lost, and it was almost 12 noon which was the cut-off time. It got back after less than an hour, although I still uploaded the photo entry but yep Nestle FB admin was so strict they did not included this in the pool of entries. :(
Though it did not make it I am happy to share it to you guys. 




Creamy Adobo Mushroom Pasta with Nestle Cream

Adobo has become one of the signature dishes of Filipino in every kitchen cooking. You can have this dish any time in any season. Every Filipino family here and abroad are accustomed to having Adobo in their table for lunch or dinner. You can use up any meat for an Adobo dish but the most commonly use is pork next would me the chicken or sometimes you can mix the two. Having soy sauce and vinegar as a combination in a dish, the dish will not spoil easily specially when it is cooked properly and simmered for hours. 

A little story during College days, when I come home for a weekend to do laundry and get my school allowance, my Mama prepares a container full of Chicken Pork Adobo that I can bring with me and I can have it for several days and even share it with my board mates. It became my comfort food from home away from home. 

I don't know why Adobo dish can bring you back through time when the kitchen smells so delish because the casserole of Adobo is simmering down for hours until the oil and the soy sauce separates.

Adobo dish it is so easy to do...believe me! Nowadays Adobo dish is being whipped up and added to another dish making it more versatile and being known all over the world.
Here is my simple Adobo pasta dish you can try.

Ingredients

For the Adobo dish:
1/2 kilo- pork spareribs
8-10 cloves of garlic minced
2tbsp- olive oil or any cooking oil 
1/8 cup-soy sauce
4tbsp- vinegar
bay leaf
black pepper
pinch of sugar

  • Boil pork spareribs in soy sauce, vinegar, bay leaf and pinch of sugar in 1/2 liters of water (optional pork brought), until tender.
  • In a low heat pan add olive oil and minced garlic sautee until golden brown, add the tender pork ribs to the ban and fry a little by mixing it with the oil and garlic.
  • Add the soy sauce, vinegar from the simmer and reduce it by simmering slow.
  • Cut the spare ribs according to section, set aside

For the pasta dish:
1/2 cup- Nestle all-purpose cream
200 grams- boiled spaghetti noodles or any pasta noodles you have
pitted black olives
button mushrooms
grated cheese
1tbsp- olive oil
minced white onion
chili flakes
  • Sautee onion with oil in a pan, add mushrooms and Nestle cream bringing to boil in a low heat.
  • Add the boiled pasta combining all the cream in the pan.
  • Add slices of black olives.
Set the pasta in a plate, topped it with the Pork Adobo spare ribs slices with cheese and chili flakes to add some kick with the flavor of the cream.

The dish can serve 2-3 person and you can have some Pork Adobo left for steamed white rice pairing. 

It would be the awesome if this dish made it but I'm glad it was a success when I paired pasta and Adobo together.

Home Cooking: High Protein and Low Carb Beef Zucchini and Pea Dish


Home cooking takes only a few minutes of your time whether it's for lunch or dinner. Plus you will benefit a lot like: it saves you money, very economical, clean, healthy and you can add and twist the flavor according to your taste.
During my weekend market, I was able to stock up some ingredients for tonight's healthy dinner.

Here is the simple recipe you can make in less than 40 minutes.







All you need:
  • 2-whole zucchini cut into bite-size (Php25/$0.55)
  • 1/4-kilo pea (Php45/$1.00)
  • 4-cloves garlic minced (Php3/$0.06)
  • 1-whole white onion chopped (Php5/$0.11)
  • 1/2-can Hunt's diced tomatoes (Php40/$0.85)
  • 1/2-Monterey ground beef (Php111/$2.37)
  • 1-tsp black ground pepper 
  • 2- tbsp cooking oil
  • laurel leaf
  • salt or fish sauce to taste
  • pinch of cumin powder or any spies you like to add
Total cost: Php250/$5.35
Preparation time: 5 minutes
Cooking time: 25-30 minutes

How to cook:
1. Brown ground beef in a stir fry pan with oil, garlic, onion. 
2.  Add 1/2 Hunts diced tomatoes, stir
3.  After 5 minutes season the ground beef with bay leaf, crushed ground pepper, and fish sauce to taste, stir and let it cook for another 5 minutes.
4. Add zucchini slices then the peas, stir fry and cook until tender.


Here is the finished dish for tonight's dinner.
You can have it as it is or some crackers or a bowl of cooked white rice. But, since tonight is a low carb dinner for me I had it as is.
